These are strange and hard times for a nation that celebrates independence, where even the ‘independently wealthy’ have been forced to recognize the inter-dependence of everyone and everything. If one follows the links of blame around, they seem to come full circle, through a maze of greed and deceit, seasoned too lightly with well-meaning folly. So why not follow these links instead. At Café Pacha we’re rightly proud of our vendors, for their quality, integrity and fair value. We haven’t raised our prices, but now we’re sourcing organic, sustainable and local ingredients. Even the photographic prints currently gracing our walls are by Rosedale’s own Jennifer Welsh.

—Austin’s own Texas Coffee Traders roasts and supplies us our superb organic and fair trade coffee beans.

—Our roasted Espresso beans detour through Houston from south of the border, via Fontana Coffee Roasters.

—All our eggs come from an organic operation, Vital Farms, right here in Austin. The pastured hens eat organic produce grown on the farm!

—Our milk comes from two sources. Remember When Dairy out of Yantis, TX supplies us with low-temperature-pasteurized, non-homogenized organic milk; and for those of you who prefer your foam just so, we have homogenized milk from Organic Valley on hand.

—We shop the Austin Farmers’ Market, and usually the bulk of our greens—always organic of course—comes selected from the splendid bounty of Gundermann Farms in Glenflora. We also get the organic Texas green stuff from Simmons Family Farms in Lockhart and Animal Farm out of Cat Spring. We get extraordinary rabbit, feral hog and humanely raised veal from Sebastien at Countryside Farms, and pasture-raised pork and beef cuts from the folks at Richardson Farms. All this stuff is as good as it gets in our fair land.

—We are members of the Wheatsville Co-Op, and we get produce, local tortillas, organic oats, and anything else there that we need day by day. A brand new resource for us is Natural Grocers on Guadalupe.

—We buy empanadas from Empanadas La Boca (local), and tamales, tofu dip and home-made yoghurt from White Mountain Foods—local. Our organic breakfast tacos are now made in-house!

—Our bagels come from the brand new Rockstar Bagels (from Austin via Queens—you’ve got to try these!), and our fabulous brownies come from Mary Louise Butters Brownies (yes, from Austin). Our scones, muffins, tea breads and cookies are fully organic and now made from scratch in the kitchen! Ah, that fresh-baked aroma ...

—We get bottled rainwater from Tank Town in Dripping Springs.

—We get odd things like organic soy milk, quinoa, raisins, agave nectar, açai juice and cashew juice too (check it out!), from the national supplier Tree Of Life, and the usual Coffee Shop supplies from MrTakeOutBags, along with the ubiquitous Sysco.

—Just like you we shop at Central Market and HEB (for organic bananas—and decent wine to cook with), Fiesta for Mexican chocolate, and even Costco for Coleman organic chickens, pub draft Guinness (for braising!) and organic blueberries.

—We bank at Eagle Bank on Guadalupe, and do our credit card processing through an Austin company.
